8 Pumpkin Recipes That Are Perfect For Fall

It's the first day of autumn and we're already looking forward to feet crunching in fallen leaves, chunky knitwear and everything pumpkin flavored.

The autumn equinox marks the beginning of fall and occurs when the sun crosses the celestial equator.

Though today is the official start of the season, many stores and restaurants have already been selling their autumnal fare, with Starbucks' fall menu debuting in August with the return of the Pumpkin Spice Latte.

Here are some delicious pumpkin recipes to get you in the mood for fall.

1. Vegan Gluten-Free Pumpkin Swirl Brownies

For those of you with a sweet tooth, give these vegan, gluten-free brownies a try. This recipe comes from TikToker and food blogger @avocado_skillet.

Start off by making flax eggs by mixing two tablespoons of ground flax with five tablespoons of water and put in the refrigerator for 10-30 minutes.

Preheat the oven to 350 degrees and mix together half a cup of coconut sugar, two tablespoons of maple syrup, half a cup of pumpkin puree, half a cup of almond butter, quarter of a cup of coconut oil, quarter of a cup of plant based milk of your choice and one teaspoon vanilla extract.

Once that is mixed, add in one and a half cups of oat flour, one teaspoon of baking powder, half a teaspoon of pumpkin pie spice or cinnamon.

Take your flax eggs out of the refrigerator and stir into your mixture until well combined.

Separate out about half a cup of your batter and set aside, you'll use this later to create the swirl effect.

Add a third of a cup of cacao to your remaining batter and mix it until well combined.

Pour your batter into a greased 8x8 baking dish and swirl the batter you set aside on top.

Bake for 23 to 27 minutes and then leave to cool for 15 minutes before serving.

2. Pumpkin Pie Crisp

This sweet treat comes from another TikToker and food blogger, @thenovicechef.

Start by preheating your oven to 375 degrees and buttering a 12-inch cast iron skillet or a medium casserole dish.

Grab a large bowl and add one can of pumpkin puree, one cup of granulated sugar, three large eggs, two teaspoons of pumpkin pie spice (or cinnamon, nutmeg and cloves if you don't have it), half a teaspoon of salt and two teaspoons of vanilla extract and whisk together.

Next, whisk in two thirds of a cup of heavy cream until your mixture is smooth and then pour into your skillet or casserole dish and set aside.

For the cinnamon streusel, whisk together two cups of flour - using a spoon to fill your measuring cup so as not to pack the flour in too firmly -, one and a half cups of granulated sugar, two teaspoons of cinnamon, and half a teaspoon of salt in a medium bowl.

Add in 12 tablespoons of melted butter, stirring it in with a fork until crumbly.

Spread this on top of your pumpkin pie mixture in an even layer and bake for 40-45 minutes when the filling should be set and the top should be golden brown.

This is best served warm with a dollop of ice cream.

3. Paleo Pumpkin Bread

With no sugar added, this recipe by Instagrammer @kalejunkie is sweetened using just one banana and packs in all your favorite autumnal flavors.

First, preheat your oven to 350 degrees and line a loaf pan with parchment paper.

Whisk together two cups of almond flour, a quarter of a cup of tapioca flour, two tablespoons of pumpkin pie spice, one and a half teaspoons of baking soda, a quarter of a teaspoon of sea salt in a medium bowl.

In a blender, blend together three quarters of a cup of pumpkin, one large ripe banana, two eggs eggs, a quarter of a cup of butter which has been melted and cooled (or use coconut oil for a dairy free version), and one teaspoon of vanilla extract. Blend until smooth.

Pour your blended mixture into your bowl and stir lightly until well combined before transferring to your loaf pan.

Bake for 50 minutes or until a toothpick comes out clean and let it cool before serving.

4. Pumpkin Overnight Oats

For those of you that like to be organized, TikToker @kenziejo_clark has got you covered with this overnight oats recipe.

Add half a cup of pumpkin puree, half a cup of almond milk, a dash of cinnamon, a third of a cup of oats, and a squirt of sugar-free maple syrup.

Give them all a stir before putting in the refrigerator overnight to enjoy the next morning.

5. Pumpkin Spice Oatmeal Cookies

This cookie recipe comes from TikToker @jendeolive.

Mix two and a half cups of rolled oats, two teaspoons of pumpkin pie spice, one teaspoon of cinnamon, and a teaspoon of stevia or sweetener of your choice in a bowl.

Add one cup of pumpkin puree and a quarter of a cup of chocolate chips and mix again.

Roll your mixture into small balls and place on a baking sheet lined with parchment paper.

Bake at 350 degrees for ten minutes.

6. Apple Fries with Pumpkin Yoghurt Dip

Use this recipe by TikToker @katcancook if you have a little pumpkin puree in your can.

Take an apple and slice it, cutting into stick shapes.

For the dip, add a cup of unsweetened yoghurt, two tablespoons of maple syrup, and a tablespoon of pumpkin puree to a bowl and sprinkle pumpkin pie spice on top to finish.

7. Chocolate Chip Pumpkin Pancakes

This delicious recipe comes from TikToker @nyfoodsharings.

In a large bowl add one cup of flour, one teaspoon of baking powder, one third of a cup of brown sugar, one to two teaspoons of cinnamon, a quarter of a teaspoon of allspice. In a separate bowl, mix together a cup of milk and one egg before pouring in.

Finally, add half a cup of pumpkin puree before mixing together and add in a few chocolate chips before frying.

Once cooked, drizzle with some caramel sauce or syrup.

8. Creamy Curry Pumpkin Soup

This autumnal recipe comes from @thewellnesskitchenista on TikTok.

Into a large pot add one tablespoon of coconut oil and one chopped onion and fry lightly.

Once your onions start to turn translucent, add in two cloves of minced garlic and a teaspoon of your favorite curry powder and leave to saute for a minute or two.

Then add two-three cups of pumpkin puree, two-three cups of broth or water, half a teaspoon of salt and put the lid on and simmer for 30 minutes.

Take off the heat and use an immersion blender to puree the soup before serving with a dollop of Greek yogurt, some toasted pumpkin seeds and a little cilantro.
